(Saleeg) is a native Saudi Arabian famous Rice that everybody loves!! 😋😋🎡
Saleeg is a famous Saudi rice. usually it is prepared for celebrations, but we also eat it as a regular meal at dinner time. The way it is cooked is unique considering it is a savory dish. people in Saudi Arabia like to gather around a large platter to fellowship and eat it, they sit on a Sofra (which is like a disposable plastic tablecloth for the floor to set the food on). Salata Hara is like a salsa but different, you put it on your rice to eat. It's a complimentary salad to every rice dish including Saleeg.
This is either a celebration or a family gathering!
INGREIENTS:
For the Chicken Stock
1 whole chicken
8 cups of water
3 green cardamom pods
3 cloves
1 cinnamon stick
1/2 tbsp of white pepper powder
1 large onion cut in half and peeled
For the Rice
6 cups prepared chicken stock
2 cups hot water
2 cups of short- grain rice, rinsed and soaked
1 cup of whole milk
2 Tbps of ghee or butter
To roast the boiled chicken
1 large Tbsp butter or ghee
1 Tbsp of tomato paste
1 tbsp of black pepper
1 tsp of salt
1 tsp of lemon
DIRECTIONS:
Cut chicken into four pieces and wash with water
Put into a stock pot with onion and spices and fill with water till
everything is covered
Bring water to a full boil
Carefully skim the froth that appears on the surface
and discard it.
Continue until stock is clear
Reduce the flame to medium and allow to cook 30 min
or until chicken is done
Remove chicken and put in backing sheet rub chicken pieces all over with
a tomato paste mixture (that you put ghee or butter in with fresh lemon and black pepper
and salt) cover and set aside
Strain the stock from the spices and onion and do not get rid of stock,
Put stock back into pot
Put rice in put with the stock
and add hot water and salt for taste to your liking
Bring all the content to a full boil, reduce heat to low and cover pot
Cook for 20 min
Make sure you stir every now and then
Open lid and add milk
and stir again
Take chicken and put into broiler
Broil till nice color and not burnt
Serve the hot rice in a plate and put chicken on top
for garnish use fresh parsley or whatever you whish
