My Favorite Saudi, "Jeddah Shakshauka" very simple egg Skillet that I grew up on! 😋🍳
Growing up in Jeddah, Saudi Arabia to a Saudi father, we always enjoyed our breakfast which a lot of times consisted of Shackshuka and Fresh hot Tameeze (a famous big round Saudi bread) that you eat with your Shackshuka. It was a mouth watering, delicious meal full of flavors bursting in your mouth like a variety of fireworks on the Fourth of July.
INGREDIENTS:
1 Tbsp Extra Virgin Olive Oil
3 Large eggs
1/2 Large Vidalia Onion, Chopped
1/2 Green Bell Pepper, Chopped
1 Large Tomato, Chopped
3/4 Cup of Cilantro or Parsley, Chopped
1/2 Bullion Cube
Black Pepper... (Season to taste)
1 tsp. Cumin Powder
1 Small Jalapeno Pepper (If desired )
DIRECTIONS:
In a heated Skillet add the olive oil and all ingredients EXCEPT
Eggs and Jalapeno Pepper
Stir the ingredients and cook until half way done, then poke small
holes in the Jalapeno, and add to the skillet and continue cooking
till contents are red.
Break the eggs into the contents of the skillet and stir to mix in
Cook till desired doneness. (Some like it cooked a little more then others)
This dish is good with fresh pita or Tameeze, which I will add the recipe
for in my next blog.
