(Foole) another bomb digity vegetarian saudi breakfast!! ๐Ÿฒ๐Ÿงจ๐Ÿ˜‹๐Ÿ˜‹

 (Foole with cooked tomatoes) is a well known food for breakfast in Saudi Arabia and the rest of the middle eastern world. It's a fava bean stew that will rock your world and consume your taste buds with flavors and textures. Every middle eastern country makes it differently. In Jeddah, we like it with (Cushna) which is a red sauce made from tomatoes, onions, cumin, garlic and other spices. Boy, just typing about it makes me want to makes some right now! lol. Anyway, let's begin. First and foremost, let me show you what it looks like. Oh, remember to eat it with fresh pita bread or Tameeze my favorite bread.  I already shared my recipe with you in one of my other blogs. 


This is another way to make it. As you can see in the image below the texture of the beans is different and there is barely any sauce in it. This is where if you don't like tomatoes, you don't have to add any, also if you like your fava beans whole, then go for it! 
I personally like my Foole with tomatoes. It just gives it that heavenly flavor! 



          INGREDIENTS:


            1/2 chopped large Vidalia onion

            1 large chopped tomato 

            1 can of fava beans crushed or whole 

            1/2 cup chopped parsley

            1 crushed clove of garlic
       
            1/2 tbsp ghee, butter or extra virgin olive oil
              
            1/2 tbsp  of cumin powder 
          
            1 tsp black pepper 
       
            1/2 chicken bullion cube, or salt in place of bullion according to your taste


         

            Directions:   


               Put a tsp of olive oil in frying pan and add all ingredients except the fava beans 
      
               Cook and stir till sauce is red, then add fava beans
      
               Cook till fava beans are crushable 
       
                Crush bean in pan and stir till food is red.  Add olive oil, butter or ghee on top of  
                 hot bean dish to melt. (In case you don't know, ghee is a substitute
                for butter) and garish 
                               
                 Eat with hot fresh pita or tameeze
